Avocado Feta Salsa

INGREDIENTS
  • 1 large avocado
  • 2 plum tomatoes
  • 1/4 cup chopped red onion
  • 1 garlic clove, minced
  • 1 T. chopped fresh parsley
  • 1/2 t. chopped fresh oregano
  • 1 t. olive oil
  • 1/2 T. red wine vinegar
  • 1/2 pkg. crumbled feta cheese (1/2 of a 4 oz. package)
DIRECTIONS
  1. Peel and seed avocado; chop avocado and tomatoes, and place in a large bowl. Add onion and next 5 ingredients. Toss to coat. Fold in cheese. Serve at once with tortilla chips. Makes 2 cups
