Avocado-Tomatillo Relish
  • Servings: Makes about 2 cups
  • 1 cup wine - for the cook
  • 2 ripe avocados, peeled, pitted and coarsely chopped
  • 1 small jalapeno, finely diced
  • 2 tomatillos, husked and coarsely chopped
  • 3 Tablespoons lime juice
  • 3 Tablespoons red onion, finely chopped
  • 2 Tablespoons canola oil
  1. Gently combine all ingredients, season to taste with salt and pepper. Use as a garnish on Tortilla Soup, Black Bean soup, or chile. Good on fish or chicken.
