- 4 pieces cod fillet (about 5 ounces)
- Salt and pepper
- 8 thin lemon slices
- 8 bay leaves
- 8 sprigs thyme
- 8 slices bacon
- About 2 tablespoons olive oil
DIRECTIONS
- Preheat oven to 400 degrees. Season fish with salt and pepper. Arrange
- lemon slices, bay leaves, and thyme sprigs atop the fillets. Wrap two pieces of
- bacon around the middle of each, like a cummerbund, to secure the lemon and
- herbs. Lay fillets in a baking dish. Drizzle over the olive oil. Bake until
- flaky and tender, about 10 minutes. Serves 4
