BACON COD
INGREDIENTS
  • 4 pieces cod fillet (about 5 ounces)
  • Salt and pepper
  • 8 thin lemon slices
  • 8 bay leaves
  • 8 sprigs thyme
  • 8 slices bacon
  • About 2 tablespoons olive oil
DIRECTIONS
  1. Preheat oven to 400 degrees. Season fish with salt and pepper. Arrange
  2. lemon slices, bay leaves, and thyme sprigs atop the fillets. Wrap two pieces of
  3. bacon around the middle of each, like a cummerbund, to secure the lemon and
  4. herbs. Lay fillets in a baking dish. Drizzle over the olive oil. Bake until
  5. flaky and tender, about 10 minutes. Serves 4
