BANANA RAISIN BREAD

INGREDIENTS
  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 3 to 4 bananas, mashed
  • (about 1 1/2 cups)
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup safflower oil
  • 3/4 cup non fat plain yogurt
  • 2/3 cup raisins
DIRECTIONS
  1. In bowl, combine all dry ingredients.
  2. In another bowl, whisk together bananas, eggs, vanilla and oil.
  3. Fold yogurt into banana mixture.
  4. Add raisins. Pour banana raisin mixture over dry ingredients and pour batter into 9x5x3-inch loaf pan coated with no stick cooking spray and dusted with flour.
  5. Bake at 350 degrees for 50 to 60 minutes.
  6. Cool in pan.
