BANANA RAISIN BREAD

INGREDIENTS
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1 cup sugar
- 1/2 teaspoon salt
- 3 to 4 bananas, mashed
- (about 1 1/2 cups)
- 2 eggs
- 1 teaspoon vanilla
- 1/2 cup safflower oil
- 3/4 cup non fat plain yogurt
- 2/3 cup raisins
DIRECTIONS
- In bowl, combine all dry ingredients.
- In another bowl, whisk together bananas, eggs, vanilla and oil.
- Fold yogurt into banana mixture.
- Add raisins. Pour banana raisin mixture over dry ingredients and pour batter into 9x5x3-inch loaf pan coated with no stick cooking spray and dusted with flour.
- Bake at 350 degrees for 50 to 60 minutes.
- Cool in pan.
