BARBECUED MEATLOAF LINDA WILLIAMSONS STYLE
INGREDIENTS
  • Servings: 4
  • Meat mix:
  • 3 Lbs ground beef
  • 1 yellow cooking onion diced
  • garlic powder
  • salt and pepper
  • 1 red or green bell pepper diced
  • Opt: 1/2 tsp paprika
  • Opt: 1/2 tsp Lawry's seasoning salt
  • Opt: 2 TBS crushed pineapple
  • reg seasoned bread crumbs (not italian seasoned) Or stove top stuffing chicken flavor ground up in food processor (make sure bread and seasoning are together before processing)
  • Sauce:
  • 4 yellow cooking onions cut in 1/2 then sliced
  • butter
  • 1 32oz bottle heinz ketchup
  • 1/4 C lemon juice
  • 1/4 C apple cider vinegar
  • 3/4 - 1 tsp yellow mustard
  • 3/4 tsp worcestershire sauce
  • salt and pepper
  • about 2 handfuls light brown sugar or to taste
  • 1 C water
DIRECTIONS
  1. Mix all meat ingredients together. Shape in meatloaf shape in baking pan making sure there's space on all sides for barbecue sauce.
  2. Sauce: In frying pan carmelize in batches onions and put in big pot when done. then in big pot add each ingredient separately heating after each addition. Then pour sauce over and around meatloaf. Cover and bake at 350F about 1/2 hour then uncover and cook till done.
