BARLEY CASSEROLE
INGREDIENTS
- Servings: 8-10
- 1 c. pearl barley, washed and
- drained
- 6 Tbsp. butter
- 1/3 c. minced green onions
- 1/4 to 1/2 c. slivered almonds
- 1 medium onion, chopped
- 2 (14 oz.) cans beef or
- chicken broth
DIRECTIONS
- Brown almonds in 2 tablespoons butter. Remove with
- slotted spoon. Brown barley and onions with remaining butter.
- Add almonds and stir. Put in 1 1/2 to 2-quart casserole.
- These steps may be done ahead and refrigerated.
- Boil broth and green onions in pan before ready to bake.
- Pour over barley in casserole. Stir and cover. Bake at 350 degrees
- for 1 hour and 10 minutes. Good with chicken or beef. Serves
- 8 to 10.
