BBQ Chicken
  • Cooking Time: 45 - 90 minutes roasting or grilling time depending on bone in or boneless chicken
  • Servings: 4-6

  • 8-10 chicken thighs and drumsticks or whole cut up chicken
  • 2 T. EVOO
  • Salt and pepper to taste
  • 2 cups BBQ sauce of choice
  1. Preheat oven or grill to 400F. Meanwhile coat chicken with oil, then season with salt and pepper. Place chicken on a rack in a foiled lined rimmed baking pan. Bake or turn off burners on one side of grill leaving other side on and cook 25 minutes. Remove chicken from oven or grill and increase heat to 425. Coat chicken over all with BBQ sauce, place back on rack in baking pan and put back in oven for 7 minutes, remove and repeat the BBQ sauce treatment and put back in oven 7 minutes, remove chicken from oven and repeat BBQ sauce again and put back in oven 7 minutes. If grilling, coat chicken with BBQ sauce and cook on lighted side of the grill for 5-10 minutes, turn chicken over, coat with BBQ sauce and cook for 5-10 minutes, turn over again, coat with BBQ sauce and cook until done. If oven roasted chicken isn’t as crispy as you like, put under broiler for 3-5 minutes to crisp skin. Serve immediately with BBQ sauce on side.
