BLT Bites

INGREDIENTS
- 16-20 cherry tomatoes
- 1 pound bacon, cooked and crumbled (I use turkey bacon)
- 1/2 cup mayo or salad dressing
- 1/3 cup chopped green onions (I used regular onion and chives one time)
- 3 tbs grated parmesan cheese
- 2 tbs snipped fresh parsley
DIRECTIONS
- Cut a thin slice off of each tomato top.
- Scoop out and discard the pulp of each tomato.
- Invert the tomatoes on a paper towel to drain well (I almost never do this).
- Combine all ingredients other than tomatoes and mix well.
- Spoon "bacon salad" mixture into tomatoes. Refrigerate for several hours.
