BLT Pasta Salad

  • For the salad:
  • 250G of penne pasta
  • 250G of rindless bacon rashers, (thinly sliced)
  • 2 x baby cos lettuce chunks, (torn)
  • 250G of cherry tomatoes, (halved)
  • 1/4 x Cup of parmesan cheese, (grated)
  • For the dressing:
  • 1/4 x Cup of whole egg mayonnaise
  • 2 x TSP of wholegrain mustard
  • 2 x TSP of lemon juice
  • 1 x TBSP of chives, (finely chopped)
  1. Cook pasta in a large saucepan of boiling salted water. Drain well and cool.
  2. Meanwhile, heat a medium frying pan on high. Saute the bacon for 2-3 minutes, until crispy.
  3. For the dressing; in a small jug, whisk together all the ingredients and season to taste.
  4. In a large salad bowl, combine the pasta, lettuce, tomatoes and bacon. Drizzle the dressing over and sprinkle with parmesan.
For a fancy variation, add sliced avocado and toasted croutons.
