BLUEBERRY OATMEAL BREAD

INGREDIENTS
- Cooking Time: 60
- 2 cups flour
- 1 tsp. baking powder
- 1 tsp. soda
- 1 tsp. salt
- 1/2 tsp. nutmeg
- 1 cup quick oatmeal
- 1/3 cup shortening
- 2 eggs
- 3/4 cup light brown sugar
- 1 cup buttermilk OR sour milk
- 1/2 cup walnuts OR pecans, chopped
- 1 cup blueberries, thawed & drained
DIRECTIONS
- Preheat oven to 350.
- Grease & sugar 9 x 5 inch pan.
- Combine dry ingredients.
- Mix shortening, sugar, and eggs until light and fluffy.
- Stir in dry ingredients until moistened.
- Fold in blueberries and nuts.
- Bake at 350 degrees for 60 minutes, or toothpick comes out clean.
- Cool in pan 10 minutes.
- Remove from pan and cool completely.
- Wrap in airtight bag.
