Bacon Mushroom Baked Potatoes
INGREDIENTS
  • Servings: 6-8
  •  8 diced potatoes
  •  ¼ cup olive oil
  •  8 crispy bacon strips, crumbled
  •  2 cups sliced mushrooms
  •  2 minced garlic cloves
  •  1 tbsp dried basil
  •  1 tsp salt
  •  1 tsp paprika
  •  1 cup mixed grated cheese
  •  Parsley
DIRECTIONS
  1. Microwave potatoes for 10 minutes in a covered microwave safe casserole dish. Toss all ingredients together except cheese. You can transfer to a shallower casserole dish if potatoes are up more than an inch of the dish. Bake @ 400F for 45 minutes. After a half an hour toss potatoes and sprinkle with cheese and parsley and return to oven.
