Bacon Mushroom Baked Potatoes

- 8 diced potatoes
- ¼ cup olive oil
- 8 crispy bacon strips, crumbled
- 2 cups sliced mushrooms
- 2 minced garlic cloves
- 1 tbsp dried basil
- 1 tsp salt
- 1 tsp paprika
- 1 cup mixed grated cheese
- Parsley
DIRECTIONS
- Microwave potatoes for 10 minutes in a covered microwave safe casserole dish. Toss all ingredients together except cheese. You can transfer to a shallower casserole dish if potatoes are up more than an inch of the dish. Bake @ 400F for 45 minutes. After a half an hour toss potatoes and sprinkle with cheese and parsley and return to oven.
