Bacon-Pimento Cheese
  • Servings: 1 Quart
  • 8 slices of bacon( used 3)Cooked and crumbled
  • 2-8-oz blocks of smoked cheddar cheese, shredded( used less than 1 cup)
  • 2-8-oz blocks of cheddr cheese, shredded ( less than 1 cup)
  • 1-1/2 cups of mayonnaise( maybe 1/2 cup low fat)
  • 4-oz jar of diced pimento, drained (1 pimento from the jar)
  • 1 Tbs sugar( did not use)
  • salt and pepper to taste( pepper only)
  1. Add all ingredients to the crumbled bacon. Mix well and serve immediately
Not the traditional Pimento and cheese! This one has life and body to it~ Its smokey and sharp and very tasty. It's a little heavier so a little bit will go a long way~ I cut back on the bacon and I did not have any smoked cheddar cheese, so I just used a Jack cheese. I think that worked out just fine as the bacon did it's job very nicely ~ I also did not use the sugar or salt~ I served it with some crackers but toasted Pita bread or Bagel Chips would be the ideal dipper, any type of flavored cracker would definitely compete with this recipe. It's jacked up and it's Good!~
