Bacon and Brown Sugar Chicken Bites

  • 2 chicken breasts, cut into 1 inch cubes
  • 10 slices of bacon, cut into thirds
  • 1 cup dark brown sugar
  • salt and pepper to taste
  • parsley
  1. Preheat oven to 350 degrees
  2. Line baking sheet with aluminum foil, I used a rack placed on top of a baking sheet
  3. Sprinkle chicken with salt and pepper
  4. Wrap each piece of chicken with a piece of bacon, the bacon will stick to the chicken
  5. Roll the bacon wrapped chicken pieces in the brown sugar until coated
  6. Season chicken again with salt and pepper
  7. Bake for 40 minutes, until bacon is crisp
  8. Garnish with parsley
Chicken bites rolled in brown sugar and wrapped in bacon. These make the perfect appetizer or double the recipe for an entree. Serve with a salad.
