Bacon and Cheese Biscuits

INGREDIENTS
  • 2 cups (500 ml) all-purpose flour
  • 1 Tbs (15 ml) baking powder
  • 1 tsp (5 ml) baking soda
  • 1/2 tsp (2 ml) salt
  • 5 Tbs (75 ml) cold butter cut into small pieces
  • 1 cup (250 ml) buttermilk
  • 2-3 slices bacon, cooked crisp and crumbled
  • 1 cup (250 ml) grated Cheddar cheese
DIRECTIONS
  1. Combine the dry ingredients in a bowl and cut in the butter using
  2. a pastry knife or a pair of dinner knives until it resembles coarse
  3. crumbs. Add the buttermilk and stir just enough to form a ball.
  4. Fold in the bacon and cheese. Drop heaping tablespoonfuls on
  5. an ungreased baking sheet and bake in a preheated 450F (230C)
  6. oven until golden brown, 10 to 12 minutes. Serve immediately.
  7. Makes about 18 biscuits
