Baked Cauliflower Tots

  • Head of cauliflower
  • 4 oz. sharp cheddar cheese
  • 1tsp salt
  • pepper to taste
  • 1 egg (beaten)
  • ΒΌ cup flour or corn meal
DIRECTIONS
  1. 1. Shred the head of cauliflower (makes about 3 cups)
  2. 2. Add sharp cheddar cheese, salt, pepper and beaten egg and flour or cornmeal
  3. 3.Mix thoroughly
  4. 4.Preheat oven to 375 degrees
  5. 5.Line cookie sheet with parchment paper and spray with non-stick cooking spray
  6. Using a tablespoon form into balls and place mixture on parchment
  7. Bake for 30 minutes or until golden brown
  8. ** Can add chopped onion or jalapenos for added flavor
