Baked Chicken and Pineapple
  • 3 (3-lb size) broiler fryers, cut up
  • 2 teaspoons dried rosemary leaves
  • 2 teaqspoons salt
  • 1/2 tespoon pepper
  • 10 shallots, peeled
  • 2 cups unsweetened pineapple juice
  • 1 teaspoon ginger
  • paprika
  1. Preheat oven to 350F.
  2. Wash chicken; drain well on paper towels.
  3. Combine rosemary, salt, and pepper; rub into chicken.
  4. Combine pineapple juice and ginger; pour over chicken. Sprinkle with paprika.
  5. Bake, uncovered, 55 to 60 mintues, or until tender.
