Baked Chicken and Pineapple
INGREDIENTS
- 3 (3-lb size) broiler fryers, cut up
- 2 teaspoons dried rosemary leaves
- 2 teaqspoons salt
- 1/2 tespoon pepper
- 10 shallots, peeled
- 2 cups unsweetened pineapple juice
- 1 teaspoon ginger
- paprika
DIRECTIONS
- Preheat oven to 350F.
- Wash chicken; drain well on paper towels.
- Combine rosemary, salt, and pepper; rub into chicken.
- Combine pineapple juice and ginger; pour over chicken. Sprinkle with paprika.
- Bake, uncovered, 55 to 60 mintues, or until tender.
