Baked Creamy Chicken Taquitos
  • 1/3 cup Cream Cheese
  • 1/4 cup Green Salsa (Verde)
  • 1 Tbsp Fresh Lime Juice
  • 1/2 tsp Cumin
  • 1 tsp Chili Powder
  • 1/2 tsp Onion Powder
  • 1/4 tsp Garlic Powder
  • 3 Tbsp Cilantro, Chopped
  • 2 Tbsp Green Onions, Sliced
  • 2 cup Shredded Cooked Chicken, Or Grilled Taco Chicken - - YUM!
  • 1 cup Pepper Jack Cheese, Shredded
  • Small Corn or Flour Tortillas
  • Kosher/Coarse Salt (Optional)
  • Cooking Spray
  1. Oven Temperature: 425°F
  2. *Heat oven to 425 degrees and line a baking sheet with foil; lightly coat with cooking spray
  3. *Heat cream cheese in the microwave for about 20-30 seconds, so it's soft and easy to stir; add green salsa, lime juice, cumin, chili powder, onion powder, and garlic powder
  4. *Stir to combine and then add cilantro and green onions; add chicken and cheese and combine well
  5. *Work with a few tortillas at a time and heat in the microwave until they are soft enough to roll without cracking (it helps to place them between damp paper towels, usually 20-30 seconds will do it - if you find yours are cracking when you roll them or are coming unrolled right away, just try heating them longer and try the paper towel thing)
  6. *Place 2-3 Tbsp of chicken mixture on the lower third of a tortilla, keeping it about 1/2 inch from the edges
  7. *Roll it up as tight as you can; place seam side down on the baking sheet; lay all the taquitos on the baking sheet and make sure they are not touching each other
  8. *Spray the tops lightly with cooking spray and sprinkle some coarse salt on top (only a little, the stuff is strong - or just leave it off)
  9. *Place pan in oven and bake for 15-20 minutes or until crisp and the ends start to get golden brown
  10. Dipping Sauce Ideas:
  11. *Avocado mixed with small amount of sour cream, salt, pepper, and dash of ground red pepper and/or garlic
  12. *Sweet Chile Sauce
  13. *Supreme Ranch Dressing Mix (recipe below)
  14. Supreme Ranch Dressing Mix: 1 c mayonnaise 1/2 c milk 1 lime (2 Tbsp) 2 garlic cloves, minced 1/2 c cilantro 1/4 c green salsa hot sauce, to taste (optional) blend all and add hot sauce if you want heat; refrigerate several hours to thicken

  16. *You can use flour or corn tortillas
  17. *It doesn't need the salt on top, more for looks...if you use it do so sparingly, as it will be easy to have overwhelming salty yuckiness
