Baked Garlic Potato Casserole

  • 2 large Potatoes, sliced 1/4-inch thick
  • 2 Tablespoons Olive oil
  • 2 Tablespoons Butter
  • 1 large Onion, diced
  • 1 1/2 teaspoon Garlic, minced
  • 2 teaspoons Parsley, chopped
DIRECTIONS
  1. Pre-heat the oven to 400. Heat the oil and butter in a
  2. skillet. Add the onion and cook until soft. Add the garlic
  3. and cook for 2 minutes longer. Lightly oil a medium
  4. casserole dish. Layer in the sliced potatoes. Pour the
  5. mixture over the potatoes. Cover and bake for 1 hour (or
  6. until the potatoes are tender). Serve warm, garnished with
  7. parsley.
