Baked Mashed Potatoes
  • 3lbs taters to 1/2 C milk
  • sliced, chunked mozzarella cheese, NOT grated (low moisture part skim)
  • Salami
  • 3 TB grated romano
  • seasoned bread crumbs (for casserole dish)
  • butter
  1. Add mozzarella, romano cheese and salami. Stir to blend. Add salt and pepper to taste.
  2. Use 1 TB butter to grease the bottom and sides of a high-sided casserole dish. Coat the bottom and sides with breadcrumbs. Spoon potato mixture into the dish and dot the top with the remaining 1 TB butter.
  3. Bake at 350° until the top is golden brown. Be careful -- this dish is VERY hot when it comes out of the oven!
I was watching one of PBS's cooking shows once (one of the ones they do when they're asking for money) and this dish sounds good. There's not measurments on everything, because either I missed that part, or they didn't say.
