Baked Mini Donuts

  • 2 tbsp. butter, softened
  • 1/8 C vegetable oil
  • 1/4 C granulated sugar
  • 2 tbsp. and 2 tsp. brown sugar
  • 1 egg
  • 3/4 tsp. baking powder
  • 1/8 tsp. baking soda
  • 1/4 tsp. nutmeg
  • 1/4 tsp. salt
  • 1/2 tsp. vanilla
  • 1 1/3 C all purpose flour
  • 1/2 C milk
DIRECTIONS
  1. 1.) Preheat oven to 425 degrees and grease pan with cooking spray
  2. 2.) In a mixing bowl, beat together butter, vegetable oil, and sugars
  3. 3.) Add in egg, beat to combine
  4. 4.) Stir in baking powder, baking soda, nutmeg, salt, and vanilla
  5. 5.) Stir in flour into mixture alternately with milk (beginning and ending with flour) making sure everything is combined
  6. 6.) Spoon batter into pan, filling a 1/4 inch shy of the rim
  7. 7.) Bake donuts for 10 minutes; remove and wait 5 minutes before turning them out of the pan
  8. 8.) Shake warm donuts in a plastic bag filled with cinnamon sugar
