Baked Mini Doughnuts

- 2 tbsp softened butter
- 1/8 cup vegetable oil
- 1/4 cup granulated sugar
- 2 tbsp and 2 tsp brown sugar
- 1 egg
- 3/4 tsp baking powder
- 1/8 tsp baking soda
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1/2 tsp vanilla
- 1 1/3 cup all purpose flour
- 1/2 cup milk
DIRECTIONS
- Preheat oven to 425 F and grease doughnut pan with cooking spray
- in a mixing bowl beat together the butter, vegetable oil, and sugars until smooth
- add in egg, beating to combine
- stir in baking powder, baking soda, nutmeg, salt, and vanilla
- Stir in the flour into mixture alternately with the milk (beginning and ending with flour) making sure everything is combined
- spoon the batter into pan filling a 1/4 inch shy of rim
- bake doughnuts for 10 minutes remove and wait 5 minutes before turning out of pan
