Baked Mini Doughnuts

  • 2 tbsp softened butter
  • 1/8 cup vegetable oil
  • 1/4 cup granulated sugar
  • 2 tbsp and 2 tsp brown sugar
  • 1 egg
  • 3/4 tsp baking powder
  • 1/8 tsp baking soda
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 tsp vanilla
  • 1 1/3 cup all purpose flour
  • 1/2 cup milk
DIRECTIONS
  1. Preheat oven to 425 F and grease doughnut pan with cooking spray
  2. in a mixing bowl beat together the butter, vegetable oil, and sugars until smooth
  3. add in egg, beating to combine
  4. stir in baking powder, baking soda, nutmeg, salt, and vanilla
  5. Stir in the flour into mixture alternately with the milk (beginning and ending with flour) making sure everything is combined
  6. spoon the batter into pan filling a 1/4 inch shy of rim
  7. bake doughnuts for 10 minutes remove and wait 5 minutes before turning out of pan
