Baked Parmesan Chicken
  • 1 cup bread crumbs
  • 1/4 cup parsley
  • 1/4 tsp salt
  • pepper to taste
  • 1/2 cup Parmesan cheese
  • 1-2 cloves garlic, chopped well
  • 2 to 3 pounds of chicken pieces
  • 1 egg beaten
  • 2/3 cup evaporated milk
  • 1/3 cup regular milk
  1. Mix together bread crumbs thru garlic in shallow bowl.
  2. Dip chicken pieces in egg/milk mixture
  3. then coat chicken pieces in crumb mixture all over.
  4. Place in a single layer in pan (if skinned pieces-spray pan with cooking spray)
  5. Bake uncovered in a 350 preheated oven until tender and coating is crispy (approximately 60 minutes (this will depend on how crowded pan is)).
Got this from my new neighbor and has become a favorite. The chicken remains moist even the next day for leftovers.
