Baked Peppers with Feta Cheese

  • Cooking Time: 30 minutes

  • 6 red peppers roasted,halved and deseeded
  • 1/4 cup extra virgin olive oil
  • Basil about a handful
  • 1 tablespoon Italian seasoning
  • 2 cloves of garlic, chopped
  • 12 small chunks of feta cheese
  • Parchment paper
DIRECTIONS
  1. Cut parchment into 6 -12squares.
  2. Place half a pepper in center of each parchment square.
  3. Drizzle each half pepper with olive oil.
  4. Tuck basil and garlic inside each pepper.
  5. Scatter the feta on top.
  6. Sprinkle with Italian seasoning.
  7. Fold side in to make a package.
  8. Bake at 400
