The U.S.Virgin Islands used to be a colony of Denmark, until Denmark sold it to the USA in 1918. Our British friends would feel very at home there, since the U.S. Virgin Islands is the only place in the USA where they drive on the left hand side of the road. We found this delightful recipe in our cookbook "Famous native recipes of the Virgin Islands," gathered from Outstanding Cooks in St.Thomas, St.Croix & St. John. Plantain is one of the stapel foods in every island of the Caribbean and the locals can make an array of delicious dishes with these plantains.
