Baked Potato Soup with Kielbasa
INGREDIENTS
  • 1 c. butter
  • 1 c. flour
  • 8 c. milk
  • 5 large potatoes, baked, cooled and cubed*
  • 5 or 6 green onions, chopped**
  • 1 smoked kielbasa, cut in bite-size pieces***
  • 1 1/2 c. shredded cheddar cheese ( we like sharp best)
  • 1 c. sour cream
  • 3/4 tsp. salt
  • 1/2 tsp. freshly ground black pepper
DIRECTIONS
  1. In soup kettle, melt butter. Stir in flour and heat 'til smooth. Gradually add milk, stirring constantly, until thickened. Add spuds, kielbasa and onions. Bring to a boil, stirring constantly. Reduce heat and simmer for about 15 minutes. Add the sour cream, salt and pepper and cheese. Stir until cheese is melted. Serve immediately.
  2. * You can peel them if you like. I leave the skins on for the added flavor and the color.
  3. ** I like to use quite a bit of the green part, again, for color. And also to garnish the soup.
  4. ***Leftover ham or ring bologna is also good in this soup. And I've used crisp fried bacon, crumbled, too.
  5. This is a real "stick-to-your-ribs" kind of soup. And is excellent served with fresh baked bread and a tossed green salad!!

Karen Well, I LOVE my soups and I LOVE my potatoes so, I try any and all potato soups when I come across them. This soups was not really too time consumming and was easy, not to mention tasty. I didn't have any Kielbasa so I tried some ham (as Kay suggested she was going to use). Well even my picky daughter enjoyed it, but she did pick out the ham, LOL! She even came back for seconds. As for me, I'm wondering if this is one of these EVEN BETTER the second day soups, so guess what is for lunch today? Thanks Kay, for another great recipe! This is supper tonight, I think!
