Baked Potato with Steamed Carrots, Cauliflower and Kale
INGREDIENTS
  • Cooking Time: 50-55 minutes

  • Two Yukon Potaoes
  • One cup broccoli (chopped)
  • One cup cauliflower (chopped)
  • Two cups Kale (chopped)
  • Olive oil or butter
  • Top with cheddar cheese (or favorite cheese)
  • optional salt for taste
DIRECTIONS
  1. Preheat oven to 400 F.
  2. Wash potatoes and cut in half lengthwise. Place potatoes in pan and cut slits in the fleshy part of the interior. Drizzle some olive oil or a slab of butter on each faced up potato. Once oven reaches 400 degrees F, place pan in oven (no need to cover potatoes with foil or cover pan).
  3. 30 minutes into baking potatoes.... heat up water in pan for steaming. You'll need a steam basket to place inside the pan. Turn on stovetop. This will take about 7-10 minutes.
  4. While you want for the pan to start steaming, wash the other veggies (carrots, cauliflower and kale). Cut them up and once you see steam in the pan. Add the veggies and steam for about 6-10 minutes (depending on how you like your steamed veggies).
  5. Your potatoes will be done after 50 minutes and by that time your veggies will be ready. Take out potatoes, plate them and cut them up in your bowl. Then top with veggies and cheese. That's it! It's really delicious. And so easy to customize to everyone's taste.
