Baked Pumpkin Ginger Oatmeal
INGREDIENTS

  • ¼ C. Pumpkin puree (from a can)
  • 2 T. Lowfat cottage cheese
  • 1 C. Water
  • ½ t. Vanilla extract
  • ½ C. Old-fashioned oats
  • ¼ t. Baking powder
  • Dash sea salt
  • 1 t. Cinnamon
  • 1/8 t. Allspice
  • 1 piece crystallized ginger, crushed
DIRECTIONS
  1. Preheat oven to 350°.
  2. Combine all wet ingredients in a large mixing bowl.
  3. Place dry ingredients, except ginger, into a small bowl. Mix well.
  4. Mix dry ingredients with wet. Stir in crystallized ginger.
  5. Bake in an oven-proof dish for 30 minutes. Drizzle with 100% pure maple syrup if desired.
