Baked Sweet Potatos in Crock Pot

  1. Simpley peel the sweet potatos and cut in half or if they are jumbo size into fourths and wrap in foil, put a little bit of water in the bottom of the crock pot and cook for 3 to 4 hours on low or until they are tender. You can serve them like a baked potato, unwrap them and mash, adding butter if you want, cook them this way to put use in another recipe. You can also freeze them either in the foil in a ziplock bag or mashed in small containers like 8oz margrine tubs. It is better not to use butter when mashing if you are freezing. When ready to eat take them out of the freezer and heat out of container in mircowave, can also thaw in the fridge.

This is really quite simple, I came up with this when it was too hot to turn the oven on.
