Baked Tortellini and Spinach with Vodka Sauce

  • 1 lb. frozen tortellini (meat or cheese)
  • 1 Tbs. Olive Oil
  • 2 Tbs. minced garlic
  • 1 bag frozen chopped spinach, thawed and drained
  • 1 24 oz. jar of Vodka Sauce (I used Bertolli)
  • 2 c. Shredded Mozzarella
  1. Preheat oven to 350.
  2. Cook Tortellini according to package directions.
  3. Heat olive oil over medium-high heat in a large skillet.
  4. Saute garlic on olive oil for two minutes.
  5. Add Vodka Sauce to the garlic in the skillet and simmer.
  6. Stir spinach and 1 cup of cheese into sauce over low heat.
  7. Drain cooked tortellini and place in a casserole or 8x8 dish.
  8. Pour sauce over tortellini and mix thoroughly.
  9. Top with remaining 1 cup of mozzarella.
  10. Bake for 15 minutes.
I love tortellini, and am always looking for a new way to use a bag of the frozen variety. I threw a few favorite ingredients together, and out popped a tasty meal!
