Balck Bean Soup

INGREDIENTS

- Preparation Time: 45 minutes
- 1 Tbsp olive oil
- 2 cloves minced garlic
- 1/2 cup water
- Dash cayenne
- 1-4 Oz. Green chilies
- 1 Tbsp. Lime or lemon juice
- Salt and Pepper to taste
- 1/2-1 cup chopped onion
- Two 15 Oz. Cans black beans, drained
- 1/2 tsp. Cumin
- One 14.5 Oz. Can stewed tomatoes (petite diced)
- One 10.5 Oz can chicken broth or make with bouillon
DIRECTIONS
- Sayte onion in oil in soup pot
- Add garlic and sauté until fragrant
- Add broth, cumin, cayenne, salt and pepper
- In the blender, add 1 can black beans and 1/2 can tomatoes and water blend until smooth
- Stir into broth mixture
- Add remainder of tomatoes and can of beans
- Bring to a boil, lower heat, and simmer for 15 minutes
- Add lime or lemon juice
- Serve warm with tortilla chips, cheese, and sour cream
