Balck Bean Soup
INGREDIENTS
  • Cooking Time: 20 minutes
  • Servings: 6
  • Preparation Time: 45 minutes
  • 1 Tbsp olive oil
  • 2 cloves minced garlic
  • 1/2 cup water
  • Dash cayenne
  • 1-4 Oz. Green chilies
  • 1 Tbsp. Lime or lemon juice
  • Salt and Pepper to taste
  • 1/2-1 cup chopped onion
  • Two 15 Oz. Cans black beans, drained
  • 1/2 tsp. Cumin
  • One 14.5 Oz. Can stewed tomatoes (petite diced)
  • One 10.5 Oz can chicken broth or make with bouillon
DIRECTIONS
  1. Sayte onion in oil in soup pot
  2. Add garlic and sauté until fragrant
  3. Add broth, cumin, cayenne, salt and pepper
  4. In the blender, add 1 can black beans and 1/2 can tomatoes and water blend until smooth
  5. Stir into broth mixture
  6. Add remainder of tomatoes and can of beans
  7. Bring to a boil, lower heat, and simmer for 15 minutes
  8. Add lime or lemon juice
  9. Serve warm with tortilla chips, cheese, and sour cream
