Balsamic Cucumber Salad

  • 1 large cucumber
  • Grape or Cherry Tomatoes
  • Olives
  • 1/2 of a yellow or white onion
  • Red Wine & Olive Oil Vinaigrette
  1. Slice the cucumber in to rounds and cut each round in to quarters. I don't peel them because I like the colors. Slice your tomatoes and olives in half. Chop your onion and add all to a large bowl. Toss with the vinaigrette of your choice and chill until serving.
  2. I eyeball all of the ingredients and keep chopping and adding until I get the right visual appeal.
