Banana Bars

  • 1/2 cup butter, softened
  • 1 1/2 cups white sugar
  • 2 eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup mashed ripe bananas
  • 1 (16 ounce) container cream cheese frosting
DIRECTIONS
  1. Preheat oven to 350. Grease a 10x15 inch jellyroll pan.
  2. In a large bowl, cream together the butter and sugar until smooth.
  3. Beat in the eggs, one at a time, then stir in the sour cream and vanilla.
  4. Combine the flour, baking soda and salt; stir into the batter.
  5. Finally, mix in the mashed banana.
  6. Spread evenly into the prepared pan.
  7. Bake for 20 to 25 minutes in the preheated oven, until a toothpick inserted into the center comes out clean.
  8. Allow bars to cool completely before frosting with the cream cheese frosting.
