Banana Blueberry Muffins

INGREDIENTS
  • 2 cups unbleached flour
  • 1 tbsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp salt
  • 3/4 cup sugar
  • 2/3 cup soy milk
  • 1.5 medium sized bananas
  • 1/4 cup all natural (no sugar added) applesauce
  • 2 tbsp pure maple syrup
  • 1tsp vanilla extract
  • 3/4 cup (or more if you wish) fresh or frozen blueberries
DIRECTIONS
  1. Preheat oven to 375-prepare 12 muffin tin with paper liners or non-stick spray
  2. stir together flour, baking powder, cinnamon, ginger, salt, and sugar in large bowl. set aside.
  3. in a blender, combine soy milk, bananas, applesauce, maple syrup, and vanilla-blend until smooth.
  4. slowly stir liquid mixture and blueberries into the dry mixture just until everything is mixed.
  5. spoon into muffin tin. bake for 20-25 minutes.
  6. let cool completely before removing
