Banana Bread

  • 3/4 cup all-purpose flour
  • 1/2 cup whole-wheat flour
  • 1 cup splenda (or other sweetener)
  • 1 egg
  • 1 egg white
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/4 cup fat-free plain or vanilla yogurt (Such as Silhouette or Source)
  • 1/4 cup vegetable oil
  • 1 tsp vanilla
  • 1 cup mashed bananas.
DIRECTIONS
  1. Mix together flours, baking powder, and baking soda.
  2. In a separate bowl, mix sugar, egg, egg white, yogurt, oil, and vanilla. Add in mashed bananas.
  3. Slowly add in dry ingredients, but do not over-mix. Batter should be a bit lumpy.
  4. Pour into loaf pan (9x5", coated with spray oil) and bake in oven for 1 hour at 180C or 350F, or until a toothpick comes out clean.
RECIPE BACKSTORY
I substituted the whole wheat flour (the original recipe I was given suggested 1.5 cups of all-purpose) in order to increase the fibre content of the recipe. If using regular sugar instead of sweetner, use 3/4 cup.
