Banana Bread

- 3/4 cup all-purpose flour
- 1/2 cup whole-wheat flour
- 1 cup splenda (or other sweetener)
- 1 egg
- 1 egg white
- 1/2 tsp baking powder
- 1 tsp baking soda
- 1/4 cup fat-free plain or vanilla yogurt (Such as Silhouette or Source)
- 1/4 cup vegetable oil
- 1 tsp vanilla
- 1 cup mashed bananas.
DIRECTIONS
- Mix together flours, baking powder, and baking soda.
- In a separate bowl, mix sugar, egg, egg white, yogurt, oil, and vanilla. Add in mashed bananas.
- Slowly add in dry ingredients, but do not over-mix. Batter should be a bit lumpy.
- Pour into loaf pan (9x5", coated with spray oil) and bake in oven for 1 hour at 180C or 350F, or until a toothpick comes out clean.
