Banana Bread
  • Cooking Time: 1 hour
  • 4 bananas mashed
  • 2 Tbsp ground flaxseed
  • 1/3 cup almond milk
  • 1/3 cup melted coconut oil
  • 2 Tbsp maple syrup
  • 2 tsp vanilla
  • 1/4 cup sugar
  • 1/2 cup whole oats
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 cups wheat flour
  • 1/4 cup chopped walnuts (optional)
  • 1/4 cup vegan chocolate chips (optional)
  1. Mash the banana in a large bowl.
  2. Mix the wet ingredients: flax, milk, oil, maple syrup, and vanilla in with the banana.
  3. Mix in dry ingredients: sugar, oats, baking soda, baking powder, salt, and flour.
  4. Optional: Mix in walnuts or chocolate chips.
  5. Pour batter into pan and bake at 350 degrees for 1 hour.
You can use any plant based milk, I just prefer almond-coconut. I use coconut oil spray to grease the pan but you can use any sort of vegan oil/ butter. Make sure the bread is cooled before taking it out of the pan. This recipe works for any size bread/ muffins, just adjust the cooking time accordingly.
