Banana Chocolate Chip Muffins

  • 3 medium very ripe bananas
  • 1 egg
  • 1/3 cup low-fat buttermilk or 1/3 cup milk plus 1 tsp white vinegar
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 3 tbsp. mini chocolate chips
DIRECTIONS
  1. Preheat oven to 350 F.
  2. Lightly coat 12 muffin tin liners with cooking spray and place in muffin tin.
  3. If you are using milk instead of buttermilk, stir a teaspoon of vinegar into the milk and let it stand until needed.
  4. In large bowl, mash bananas with fork. (An immersion blender works well for this.)
  5. Whisk in egg, milk, granulated sugar, and brown sugar.
  6. In separate bowl, combine flour, baking soda, and salt.
  7. Add flour mixture to banana mixture and combine well.
  8. Fold in chocolate chips.
  9. Spoon equal amounts of batter into the prepared muffin cups.
  10. Bake 30 minutes or until toothpick inserted into the center of a muffin comes out clean.
  11. Allow to cool slightly in pan, then remove to wire rack.
RECIPE BACKSTORY
This is a very tasty and very low fat muffin with a wonderful texture. These muffins freeze well.
