Banana Chocolate chip muffins

  • 1/2 c butter, softened
  • 1/2 c sugar
  • 1/2 c packed brown sugar
  • 2 eggs, beaten
  • 3 ripe bananas, mashed
  • 3 t vanilla extract
  • 2 c flour
  • 3 t baking soda
  • 1 c semisweet chocolate chips
DIRECTIONS
  1. Cream together butter and sugars
  2. Beat in eggs, bananas, and vanilla
  3. Sift flour and baking soda, then slowly add to rest of mixture until just combined
  4. Stir in chocolate chips
  5. Spoon into muffin cups, filling about half full
  6. Bake at 350 degrees for 15 to 20 minutes or until toothpick comes out clean
  7. Cool for 5 minutes before removing from pans to cooling rack
RECIPE BACKSTORY
I actually first had these at a memorial get together - they are great "welcome new neighbor" treats, and another way to use up those ripe bananas!
