Banana Fruit Cake
INGREDIENTS
- 1½ c. sifted flour
- 1½ c. sugar
- 1 tsp. baking powder
- 1 tsp. salt
- 2 (7¼ oz.) pkg. dates
- 2 (20 oz.) cans pineapple chunks, drained
- 1½ c. raisins
- 2 (16 oz.) jars maraschino cherries, drained
- 4 c. pecans
- 6 eggs
- ½ c. orange juice
DIRECTIONS
- Grease 2 loaf pans and line with greased brown paper.
- Sift flour, sugar, baking powder and salt into large bowl.
- Add fruit and nuts. Toss.
- Beat eggs and juice; pour over fruit mixture and combine.
- Turn mixture into pans and pack lightly.
- Bake 300° for 1¾ hours or until toothpick inserted in center comes out clean.
