Banana Nutella Cake

  • 3 brown bananas
  • 2 eggs
  • 1/2 cup All Natural Peanut or Almond Butter
  • 1/2 cup maple syrup
  • 1 tsp vanilla
  • 1/2 cup almond milk
  • 2 cups flour
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 1/2 cup dark chocolate chips
  • Nutella to frost
  1. Preheat oven to 350 degrees and spray a 9 inch baking pan with coconut oil
  2. Combine wet ingredients: ripe/browned bananas (or bake yellow bananas for 10-15 min at 350 to ripen), eggs, almond or peanut butter, maple syrup, vanilla, and almond milk
  3. Combine dry ingredients: flour, baking powder, and cinnamon
  4. Add dry ingredients to wet ingredients and combine well. Fold in chocolate chips. Bake for 25 minutes or until center is cooked and a fork comes out clean
  5. Let cool, and then frost with Nutella
  6. Enjoy!
Not my favorite. I think the recipe has a lot going on that doesn't necessarily mesh. I want to finesse this next time i make it. UPDATE - I mashed up what was left of the cake and poured in a little bit of almond milk to make it moist, and turned them into cake pops and they are pretty tasty....Form the mashed up former cake into little balls, and freeze for an hour. Take out and let soften, then heat Nutella in microwave for about 30 seconds. Dip popsicle sticks into Nutella then poke into your ball and then coat the entire ball in the Nutella. Let set for a few mins and enjoy. Can keep in the fridge for several days. Much better than its original cake form.
