Banana Oatmeal Breakfast Cookies
INGREDIENTS
- 1/2 C peanut butter
- 1/2 C butter
- 3/4 C packed brown sugar
- 1 egg
- 1 tsp vanilla
- 2 ripe bananas, mashed (1 cup)
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 C all purpose flour
- 3/4 C whole wheat flour
- 1/4 C wheat germ
- 2 C rolled oats
- 1 C dried cherries or raisins
DIRECTIONS
- Beat peanut butter and butter with electric mixer for 30 seconds.
- Add brown sugar; beat until combined.
- Beat in egg & vanilla until mixed.
- Beat in bananas, soda, & salt. Mix in flours and wheat germ.
- Stir in oats and cherries.
- Drop by 1/4 cup measure onto ungreased cookie sheet.
- Spread to 3" rounds.
- Bake at 350° for 15-16 minutes or until edges are browned. Let stand 1 minute.
- Remove; cool on wire rack.
- Serve in 24 hours or freeze. Make 20 cookies.
