Banana Oatmeal Breakfast Cookies

INGREDIENTS
  • 1/2 C peanut butter
  • 1/2 C butter
  • 3/4 C packed brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 2 ripe bananas, mashed (1 cup)
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 C all purpose flour
  • 3/4 C whole wheat flour
  • 1/4 C wheat germ
  • 2 C rolled oats
  • 1 C dried cherries or raisins
DIRECTIONS
  1. Beat peanut butter and butter with electric mixer for 30 seconds.
  2. Add brown sugar; beat until combined.
  3. Beat in egg & vanilla until mixed.
  4. Beat in bananas, soda, & salt. Mix in flours and wheat germ.
  5. Stir in oats and cherries.
  6. Drop by 1/4 cup measure onto ungreased cookie sheet.
  7. Spread to 3" rounds.
  8. Bake at 350° for 15-16 minutes or until edges are browned. Let stand 1 minute.
  9. Remove; cool on wire rack.
  10. Serve in 24 hours or freeze. Make 20 cookies.
