Banana Oatmeal Muffins
  • 3 mashed bananas (the more ripe the better!)
  • 1 cup vanilla Almond milk (or 2% milk with 1/4 cup sugar)
  • 2 eggs
  • 1 T. baking powder
  • 3 cups Old Fashion Oats
  • 1 t.vanilla extract
  • 3 T. mini chocolate chips
  1. Preheat oven to 375 degrees. Mix all ingredients except the chocolate chips together, and let sit while you prepare the muffin pans.
  2. Spray a muffin pan and/or liners with with non-stick spray.
  3. Stir the chocolate chips into the oatmeal batter.
  4. Divide batter into 15 muffin cups. They should be just about filled.
  5. Bake 20 minutes, until they begin to brown and become firm.
A nutritious breakfast that tastes good too. These are very easy to make and will feed you breakfast for 2 weeks or more.
