Banana Oatmeal Walnut Cranberry Muffins

INGREDIENTS
  • 4 oz by weight - old fashioned rolled oats
  • 6 oz by weight - all purpose flour
  • 1 tsp baking soda
  • ¼ tsp baking powder
  • ¼ tsp salt
  • 1 stick unsalted butter- softened (omit salt of using salted butter)
  • 8 oz sugar
  • 2 eggs
  • ½ tsp vanilla
  • 1 cup mashed very ripe bananas (2 to 3 bananas)
  • ½ cup chopped walnuts
  • ½ cup dried cranberries
DIRECTIONS
  1. Heat oven to 350.
  2. Cream sugar and butter together. Add eggs one at a time. Add oats. Mix on medium speed for a minute. Scrape bowl and add vanilla and banana. Mix one minute. Add flour, baking soda and powder, walnuts, and cranberries. Mix until just incorporated.
  3. Fill lined muffin tins (16-17) ⅔ full. Baked at 350 for 17-18 minutes.
