Banana Pecan Pancakes
  • 1 banana
  • 1/2 cup plus 1 tablespoon flour
  • 1 tablespoon baking powder
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/3 cup cornmeal
  • 3/4 cup milk
  • 1 egg
  • 1/3 cup pecans, chopped
  1. Mix all ingredients in a blender or in a bowl with an electric mixer.
  2. Cook on a hot griddle, using about 1/4 cup of batter per pancake.
These are more filling than plain pancakes but have the normal fluffiness and texture of pancakes. I cannot remember where the recipe came from, but I make frequently. You can use whatever nuts are handy (I tried almonds recently -- very tasty) and add blueberries or other fruit.
