Banana Split Snack Cake

  • 1 cup margarine or butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup buttermilk (or use 1 tbsp. vinegar or lemon juice plus enough milk to make 1 c.)
  • 1 cup (2 med.) bananas, mashed
  • 1 teaspoon vanilla
  • 2 cups Pillsbury's best all purpose or unbleached flour
  • 1 cup quick cooking rolled oats
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 6 ounces semisweet chocolate chips
  • 1/2 cup chopped nuts
DIRECTIONS
  1. Heat oven to 350 degrees.
  2. Grease 13 x 9 inch pan.
  3. In large bowl, cream butter, sugar and eggs.
  4. Stir in buttermilk, bananas and vanilla; mixing well.
  5. Lightly spoon flour into measuring cup; level off.
  6. Stir in flour, oats, soda and salt; mix well.
  7. Stir in chips.
  8. Spread batter in prepared pan.
  9. Sprinkle nuts on top. Bake at 350 degrees for 30 to 35 minutes.
  10. Makes 12 servings.
