Banana pikelets
  • 1 cup of flour
  • 1 t cream of tartar
  • 1/2 t baking soda
  • 1 t sugar
  • 1 egg
  • 3/4 cup milk
  • 1 banana
  • 1 Tbsp butter
  1. 1) sift flour, cream of tartar, baking soda and sugar into a bowl.
  2. 2) beat eggs and milk together, make a well in the centre of the dry ingredient and stir in the mixture and melted butter.
  3. 3)heat a frying pan and cook tablespoons of mixture on at well-greased surface until bubbles start to appear on piklets. Place a few banana on top and turn to cook on the other side.
  4. 4) continue with remaining mixture. Serve warm with butter and a drizzle of honey.
