Banana-split Cookies

  • 2 3/4 cups all-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. fine salt
  • 8 tablespoons (1 stick) unsalted
  • butter, softed*
  • 4 oz. (1/2 stick) cream cheese
  • 1 cup dark brown sugar
  • 1/2 cup lite brown sugar
  • 2 large eggs
  • 1 1/2 tsp. vanilla extract
  • 1 tsp. banana extract
  • 1 1/2 bananas purried
  • 1 cup dried cherries
  • 1 cup chopped walnuts
  • 1 dark chocolate bar
DIRECTIONS
  1. Once again this is another recipe I
  2. made up on my own, just another
  3. recipe i made for my daughter to
  4. take to her class mates to share. I
  5. didn't get this out of a cookbook,
  6. or copied it off of any cooking
  7. site.
  8. 2 3/4 cups all-purpose flour
  9. 1 tsp. baking soda
  10. 1/2 tsp. fine salt
  11. 8 tablespoons (1 stick) unsalted
  12. butter, softed*
  13. 4 oz. (1/2 stick) cream cheese
  14. 1 cup dark brown sugar
  15. 1/2 cup lite brown sugar
  16. 2 large eggs
  17. 1 1/2 tsp. vanilla extract
  18. 1 tsp. banana extract
  19. 1 1/2 bananas purried
  20. 1 cup dried cherries
  21. 1 cup chopped walnuts
  22. 1 dark chocolate bar
  23. 1.Evenly position 2 racks in the
  24. middle of the oven and preheat to
  25. 375 degrees F. Line 2 baking sheets
  26. with parchment paper or silicone
  27. sheets. (If you only have 1 baking
  28. sheet, let it cool completely
  29. between batches.)
  30. 2.Put the butter in a microwave safe
  31. bowl, cover and microwave on medium
  32. power until melted. (Alternatively
  33. melt in a small saucepan.) Cool
  34. slightly. Whisk the sugars, eggs,
  35. butter, vanilla and banana extract
  36. in a large bowl until smooth. Whisk
  37. the flour, baking soda and salt in
  38. another bowl. Stir the dry
  39. ingredients into the wet ingredients
  40. with a wooden spoon; take care not
  41. to over mix. Stir in the cherries
  42. and walnuts.
  43. 3.Scoop heaping tablespoons of the
  44. dough onto the prepared pans. Wet
  45. hands slightly and roll the dough
  46. into balls. Space the cookies about
  47. 2-inches apart on the pans. Bake,
  48. until golden, but still soft in the
  49. center, 12 to 16 minutes, depending
  50. on how chewy or crunchy you like
  51. your cookies. Transfer hot cookies
  52. with a spatula to a rack to cool.
  53. 4.Chop chocolate bar into pieces;
  54. Place chocolate pieces into a
  55. medium bowl,cover. Heat on high in
  56. microwave for 30 to 45(depending on
  57. the microwave). Stir until chocolate
  58. is smooth.
  59. 5.Dip cookie half way into the
  60. melted chocolate, and place the
  61. cookies back onto the wire rack. Let
  62. cool and Serve.
  63. *If you have no choice but to use
  64. salted butter in a recipe, the rule
  65. of thumb is to omit about 1/4 tsp.
  66. salt per 1/2 cup (1 stick)of butter.
