Barbacoa de res
  • 2 Lbs. de Cachete de res (Beef Cheek)
  • 2 Lbs. de Labio de res (Beef Lips )
  • (can be found in a Mexican Meat market)
  • 2 0ranges
  • 1 bay leaf
  • 1/4 tsp cumin
  • 2 Garlic cloves (crushed)
  • 1/2 onion cut coarsely
  • Salt to taste ( I use Seasoned salt )
  • for the Tacos :
  • finely chopped onion and cilantro ( you can mix both in a bowl)
  • Limes
  1. This should be done the night before:first rinse the meat and place it in a good size crock pot , squeeze the Oranges,add the bay leaf, Garlic ,Onion, Cumin and Salt .
  2. Let it cook until the meat is tender (approx 12 hours)
  3. you need to remove the hard skin of the lips (discard it)
  4. You can remove the fat if you want, chop up the meat and serve immediately with warm corn tortillas and garnish with chopped Onions ,Cilantro and lime juice and your favorite red Hot sauce.
