Barley Casserole
INGREDIENTS
  • 1 onion chopped
  • 1/2 lb fresh mushrooms
  • 1/4 c butter or margarine
  • 1/2 c chopped celery
  • 1 c pearl barley
  • 2 c undiluted chicken broth
DIRECTIONS
  1. Saute onions, celery and mushrooms until wilted. Add barley, stir until golden brown.
  2. In greased 2 qt. casserole put barley and vegetables. Add 1 c chicken broth, cover and bake in 350 degree oven for 30 minutes. Uncover casserole and add 2nd cup of chicken broth and bake until liquid is absorbed
