Barley Soup, Sally Style

INGREDIENTS
  • Cooking Time: 3 hours, 10 mins
  • 3/4 cup Pearl Barley soaked 12 hrs in cold water
  • 1 1/2 lbs lean stew meat
  • 1 1/2 cups chopped onion
  • 1 cup diced or sliced carrots
  • 1 cup diced turnips
  • 2 quarts boiling water
  • 1 tablespoon salt
  • 1 pkg frozen corn
  • 1 can of tomatoes cut up
DIRECTIONS
  1. Wash and drain barley
  2. Combine all ingredients (except corn) in kettle.
  3. Cover with tight lid for 3 hours, stirring occasionally
  4. Add corn, boil 10 minutes.

I just came across this recipe (in my pile of recipes). It's in my husbands mom's writing. She passed away before I met my husband. It's always a treasure to find one of her recipes.
