Basil Pesto Tomato Mozzerella Chicken Bake
  • Ingredients:
  • • 4 thin sliced chicken breasts boneless, skinless
  • • Salt
  • • 4 cloves minced garlic (I use the one in the glass jar)
  • • ½ cup basil pesto
  • • 2 fresh tomatoes sliced
  • • 8 oz fresh Mozzarella cheese, sliced
  1. Directions:
  2. Preheat oven to 400 F.
  3. Place chicken breasts in a medium size casserole pan.
  4. Sprinkle with salt as desired. Top with minced garlic.
  5. Spread basil pesto evenly over each chicken breast.
  6. Add tomato slices on top.
  7. Add thickly sliced fresh Mozzarella cheese on top.
  8. Bake chicken breasts, uncovered, at 400 F for 20-30 minutes, depending on the thickness of the chicken.
  9. Before serving top with another slice of tomato (if desired). Serve with cooked Jasmine Rice or Angel Hair pasta. You can pour the juices from the bottom of the casserole pan over the rice or pasta.
